INGREDIENTS

4 Boneless Skinless Chicken thighs

3 Tbsp Gochujang Paste

1/2 Cup Sauce sauce 

1 tsp fresh Ginger (about a 1/2 in cube)

2 Green onion

4 Garlic Cloves

2 Tbsp Honey

1 Lime Juice and Zest

1/3 Bunch of Cilantro Leaves

1/2 tsp Fish Sauce

1 Tbsp Sesame Oil

As Needed - Korean BBQ Sauce, use your favorite or mine!

NEXT LEVEL TIP:

Gochujang is a Korean Fermented Chili Paste, its packed with flavor, Umami and heat. If you are worried about the spice level in this dish do not switch it out! reduce it by 1 tbsp or add an extra tbsp of honey to help tone down the spice level but still give you the wonderful flavors that the paste has to offer!


Directions:

  1. Combine all ingredients except for Chicken in a blender, and blend until smooth.

  2. Pour over Chicken Thighs in an airtight container and let sit for at least 2 hours, or as long as 24 hours.

  3. Turn grill on medium high heat,

    • if using a stove top griddle turn oven on to 350 Degrees Fahrenheit.

  4. Use a high heat cooking spray oil to spray on the grill to help prevent the chicken from sticking.

  5. Place Chicken on the grill and cook 2-3 min.

  6. Flip Chicken over and grill for an additional 2-3 minutes. 

  7. Flip and rotate Chicken 90 degrees and repeat last two steps.

  8. Check temperature of Chicken and if it has not reached internal Temperature of 165 Degrees Fahrenheit, move chicken to either a top rack or to a cool spot on the e grill and additional 5 min. and check the temperature again. Be Sure to cook chicken to 165 Degrees Fahrenheit internal Temperature. 

    • If using an indoor stove top griddle, place on sheet tray and put in over for 8-10 min, checking the temperature of chicken to ensure that it has reached 165 Degrees Fahrenheit internal Temperature.

  9. Glaze chicken with bbq sauce and garnish with chopped green onion, cilantro, and sesame seeds.

NEXT LEVEL TIP:

I love cooking with Chicken thighs whenever possible, to me they have much more flavor than the chicken breast not to mention they generally cook faster, and are more forgiving if they are over cooked.
