I felt challenged and inspired by some review videos of a Trader Joes Butternut Squash Mac and Cheese. I had not tried it yet but was confident that i could make something better! So I leaned in on some local mushrooms from Intermountain Gourmet, and some local Cheese from Beehive Cheese. It was magical! This was so delicious from start to finish!
