Romesco Sauce with Air Fried Eggplant and Manchego Cheese

In this video I make a delicious yet simple Romesco sauce! A traditional Sauce that hails from Spain, it is bright, refreshing, and full of flavor! Typically it consists of a roasted tomatoes, almonds and dried nora peppers but today we are mixing it up! We are roasting off a red bell pepper, toasting up some Chile De Arbol and New Mexico Dried chiles and adding a touch of heat with roasting a fresh jalapeno! The best part of this sauce besides the beautifully intense flavor is the simplicity of how to make it! I Roast everything together on a sheet tray, pop them in a blender and blend till I get the consistency that I enjoy! Boom you are ready to go! It can be served hot or cold, used as a marinade, even as a spread on a sandwich! It pairs really well with most fish, but specially white fish. What about grilled or roasted chicken, YUP! How about pork? Aboslutely! Beef?? I dont see why not! The options are truly endless!! Today I decided to go the vegetarian route being inspired by Eggplant parmesan! I through together a simple breaded Eggplant and serve it up with this amazing Romesco Sauce and freshly grated Manchego cheese to take it to the next level and realyl bring home the Spanish flavors!
