5 WAYS TO COOK WINGS
INGREDIENTS
Oil as needed per cooking method needs
Favorite Wing Sauces as needed
Beer Brined Wings as needed
COOKING METHODS
FRIED:
In a large pot, fill about 3-4 in deep with frying oil.
Over medium hIgh heat bring frying oil to 365 Degrees Fahrenheit (you want to fry your wings between 350-375 degrees fahrenheit).
Be sure that wings are dry, place carefully in hot oil, and one at a time and cook for about 6-7 minutes or until an internal temperature of 165 degrees Fahrenheit is reached.
Remove from oil using tongs or metal slotted spoon.
Place on a clean rack on a sheet tray or on paper towels to collect excess oil, season with salt.
Place in a bowl and toss with your favorite sauce and enjoy!
NEXT LEVEL TIP:
Dont be afraid to switch up the oil or fat you are using, While vegetable, corn, or conola oil are great for frying they don’t always give the greater flavor. You can always blend beef tallow, duck fat, or even rendered chicken or pork fat into your oil to increase the flavor! Be careful when using these fats as they have different smoke points so be sure to use a thermometer and bring up to temperature slowly!
BAKED:
Preheat oven to 325 degrees Fahrenheit.
Lightly coat wings in oil, and back on a sheet tray for 25 minute.
At 25 minutes, turn the oven up to 425 degrees Fahrenheit and cook an additional 20-25 minutes, until crisp and an internal temperature of 165 degrees Fahrenheit is reached.
Remove from the oven and let cool for about 3 minutes toss with your favorite sauce and enjoy!
NEXT LEVEL TIP:
If you have an oven safe cooking rack that can fit in or on your tray use it! It will give you less points if can’t act between the chicken wing and the pan giving you an overall more crispy wing! Plus it’s easier to save that delicious chicken fat that’s left over!
GRILLED:
Turn half of the grill on medium- high heat, around 400 degrees.
Grease grill, and place wings in a single layer on grill.
Cook each side 3-4 minutes to ensure good grill marks.
Move wings to the cooler side and let cook for about 40 minutes. If not using an outdoor grill with a lid, place wings on a cooking sheet and in the oven at 350 degrees for 40 minutes to finish cooking to an internal temperature of 165 degrees Fahrenheit.
Toss in your favorite sauce, and throw place on hot side of grill, for 2-3 minutes, to help caramelize the sauce, and crispy up the wings a bit and enjoy!
NEXT LEVEL TIP:
You can always precook your wings in the oven the day before. Use the first half of the baked recipe to fully cook the wings at a low temperature and remove from oven and cool, reserve any rendered fat from the cooking process. Then just before grilling toss in that rendered fat and hit the grill to mark and crisp them up before adding your favorite sauce! Unless deep frying, the best way to get a crispy skin is to slowly render the fat under the skin, to prevent the skin from burning or ending ups
SMOKED & FRIED:
Set smoker to 225 degrees Fahrenheit.
Place wings in a single layer in a disposable pan or on a cooking rack with a pan underneath to catch drippings.
Cook for 45 hour, and flip over and cook for an additional 45. Be sure to cook the weeks until an internal temperature of 165 degrees Fahrenheit is reached.
Fill a Cast iron pan or dutch oven with about 3 inches of frying oil, and place on stove or a direct heat source to heat oil up to 365 Fahrenheit (you want to fry your wings between 350-375 degrees Fahrenheit).
Remove wings from the smoker, let rest for 10-15 minutes.
When oil has reached temperature, fry 3-4 minutes or until crispy.
Remove from oil, place on a rack or paper towels for 1-2 minutes, and lightly season with salt.
Toss in your favorite sauce and enjoy!
NEXT LEVEL TIP:
Add the smoked chicken drippings to your frying oil for extra flavor or use it in your favorite sauce recipe to replace the oil or butter This enhance the smoked flavor by layering it through out the wings!
You can also air fry or finish in the oven to crips up the wings if you want to skip the frying.
AIR FRYER:
Toss about 6 wings (or however many will fit in your a single layer in your Air Fryer) in 2 tsp of oil.
Place in Air Fryer in a close to a single layer as you can, turn Air Fryer on and cook for about 7 minutes or until an internal temperature of 165 degrees Fahrenheit is reached.
Toss in your favorite sauce and enjoy!
NEXT LEVEL TIP:
Using an aerosol can of oil is a great way to get an even and light coating of oil on each side of the wings. This will help ensure that you get that wonderful crispy skin while cooking them in the Air Fryer!
