Quick Pickling Ratios

Pickling Liquid or Brine Ratio:

1 Part Vinegar to 1 Part Water

Salt to Sugar Ratio:

1 Part Salt to 1 Part Sugar ( or sweetener)

Salt & Sugar to Pickling Liquid:

1 Tbsp Salt and Sugar mixture to 1 Cup Pickling Liquid

Dry Spices to Pickling Liquid:

1 Tbsp Dry Spices to 1 Cup Pickling Liquid

Fresh Herbs to Pickling Liquid:

about 3 Tbsp fresh Herbs to 1 Cup Pickling Liquid

Ingredients to be pickled to Pickling Liquid:

Will vary on how much your container can hold, be sure to have enough to cover the Pickling ingredient.

NEXT LEVEL TIP:

You can really play with any combination of flavors when quick pickling. Be sure to taste along the way and take into account the different salt, acidic and bitter flavors when using different liquids like beer, stock, or juice to keep it balanced you may need to add more salt or more sugar.


DIRECTIONS

  1. In a pot combine, liquids, salt and sugar mixture, dry spices and Fresh herbs.

  2. Bring to a boil, and turn down to a simmer

  3. let simmer about 5-10 minutes or until salt and sugar have dissolved.

  4. pour brine over fruit, vegetables, nuts, seed or what ever you are wanting to pickle.

  5. Let Cool, keep tightly covered in fridge.

  6. Pickles can last for a few weeks to a few months in fridge.

NEXT LEVEL TIP:

Be sure to make enough brine to cover whatever ingredients you have decided to pickle fully, and be sure to use a heat resistant container that has a little that can make the container air tight.
