Cinnamon Lemon & Ginger Cloud Bread with Lemon Ginger Berry Compote
INGREDIENTS
Cinnamon Lemon & Ginger Cloud bread
1 lemon zest
3 oz cream cheese
3/4 cup egg whites
1 Tbsp Monk Fruit
3/4 tsp Cream of Tarter
1/4 tsp Ground Ginger
1/4 tsp Ground Cinnamon
1/8 tsp Redmond Real Salt Powder
Lemon Ginger Berry Compote
1 cup blue berries
1 cup strawberries
4-8 oz Ginger Lemon Grass Tea
1 Lemon, Juiced, and Reserved Rind
1-2 Tbsp Monk Fruit
1/2 tsp Dried Basil
1/4 tsp Ground Ginger
1/4 tsp Ground Cinnamon
As needed Fresh mint leaves and stems
NEXT LEVEL TIP:
The zest from the lemon really brings this dish to life, giving a great balance of fresh and sweet to the dish as a whole. If you don’t like to keep fresh lemons on hand, bottle lemon juice and freeze dried lemon peels will do wonders as well as have a great shelf life!
Directions:
Cinnamon Lemon Ginger Cloud Bread
1. preheat oven to 300 degrees Fahrenheit
2. Combine cream cheese, ginger, cinnamon, zest of Lemon, monk fruit, and salt in stand up mixing bowl.
3. Mix until smooth. You can add a little bit of lemon juice to help loosen the cream cheese.
4. Once smooth move to another bowl.
5. In stand up mixing up whip Egg Whites and Cream of Tarter until stiff peaks are reached.
6. Fold whipped Egg Whites into Cream Cheese Mixture, be sure not to deflate the whipped Egg whites.
7. Spoon mixture out onto a parchment lined baking sheet, about 1/4 cup portions.
8. Bake for 15-30 minutes.
Lemon Ginger Berry Compote
1. Brew ginger lemongrass tea with lemons, lemon juice, and stems from mint.
2. In a small pan heat oil over medium heat.
3. Add berries and cook stirring occasionally for 5 minutes.
4. Add dry spices and cook an additional 2 minute.
5. Add 1/2 cup of strained tea and a few mint leaves cook additional 5 minutes.
6. Add monk fruit and salt to taste.
7. Turn heat to a low simmer and cook until slightly thick.
8. Check for seasoning and enjoy!
NEXT LEVEL TIP:
I love cooking with Chicken thighs whenever possible, to me they have much more flavor than the chicken breast not to mention they generally cook faster, and are more forgiving if they are over cooked.
