INGREDIENTS

¼ Mini watermelon - cut into 1/2 inch rounds

¼ Cantaloupe - cut into 1/2 inch rounds 

¼ Honeydew - cut into 1/2 inch rounds

¼ pineapple - cut into 1/2 inch planks

4 oz assorted berries 

1/4 Cup Mirin

1 Tbsp Brown Sugar

1 Lime Juice and Zested  

1 Tbsp Thai Basil Minced 

2 Tbsp Fresh Mint Minced 

1 Cup Siggis Yogurt - vanilla 

1 Yakult 

Sesame Seeds to garnish

1 cup Honey Roasted Peanuts 

¼ cup Toasted Shredded Coconut

NEXT LEVEL TIP:

When grilling Melons for you want to do it on a really high heat, and really fast. Cooking them for to long and heating them through will turn them mushy, by grilling them on a high heat and creating some char lines or “marking them” you are able to caramelize some of the natural sugars in the melons creating an extra depth of flavor in the fruit.


DIRECTIONS

  1. In a large bowl combine the Mint, Thai Basil, Mirin, Brown Sugar with lime juice and zest, and set in fridge.

  2. Turn grill on high heat, and grill assorted fruit just to mark each side about 1-2 minutes per side.

  3. Once marked on grill place on sheet tray in a single layer to cool.

  4. Once cooled, cut into ½ inch cubes and place in bowl with marinade, toss all together to coat evenly and place in fridge until ready to serve.

  5.  In a Small bowl combine 1 cup of Siggi's Vanilla Yogurt with 1 yakult and mix well. 

  6. Create individual parfaits by drizzling 1/4 of yogurt mixture over the top of marinated fruit garnish with Sesame Seeds, Honey Roasted Peanuts and Toasted Coconut.

NEXT LEVEL TIP:

Italian Basil is slightly sweeter than the savory and spicy flavors of the Thai Basil. Both can be used in this recipe, but the Thai basil leaves are a bit sturdier and will hold up both physically as well as visually in the marinade.
