INGREDIENTS

For 1-4 lbs of wings/ Poultry

1 12 oz can of your favorite Beer 

1 Tbsp Salt, Kosher

2 Tbsp Brown Sugar

2 Bay leaves

2 tsp Black Pepper

NEXT LEVEL TIP:

If Beer is not your thing, using an “Apple Beer”, or a Soda. Pay attention to the flavors of the soda that you choose and make sure that they will play well will the final flavor that you are going for. Also remember that using a soda will increase the sweetness of the wings, so you can skip or reduce the brown sugar by half., Soda also can be more intense in the flavors so you won’t need to marinate them for the full 24 hours, 2-3 hours will be plenty!


DIRECTIONS

  1. Mix brining ingredients until salt and sugar have dissolved.

  2. Add wings and let brine for 12-24 hours.

  3. Remove from brine 2 hrs before cooking, pat dry, and place on a rack and place in the fridge to dry until ready to cook. 

NEXT LEVEL TIP:

This brine is not just for wings, use It on your Thanksgiving turkey, fried chicken, grilled or baked chicken breast, the alcohol and the salt combination not only gives great flavor but does a great job of breaking the poultry down making it tender and juicy for whatever cooking method you choose!
