Beer Mustard Hot Sauce
INGREDIENTS
½ cup Viennes Amber Lager by Bohemian or your favorite IPA
2 Tbsp Stone Ground Mustard
1 Tbsp Shallot, Minced/Grated
1 Tbsp Oil
1 Tbsp Thyme, Minced
1 Tbsp Yellow Mustard
1-2 Tbsp Prepared Horseradish (depending on desired spice level)
1 Tbsp Mustard Seed Ground
1 Tbsp Honey
1 tsp Garlic, Minced
½ tsp Salt, Kosher
¼-1/2 tsp Cayenne Pepper (depending on desired spice level)
¼ tsp Black Pepper
1 Tbsp Butter
NEXT LEVEL TIP:
It’s best to use fresh prepared horseradish, or freshly grated. If you are using a prepared horseradish that is cream, or is mayo based that will work as well, you will want to add it with the butter to finish the sauce, to help prevent the prepared horseradish from breaking due to the heat.
Directions:
In a small saucepan, heat oil on medium high heat.
Add Shallots, Thyme, 1 Tbsp Stone Ground Mustard, Salt, and Pepper.
Stirring gently cook for 3 minutes.
Add Yellow mustard, Ground Mustard, Garlic, Cayenne Pepper.
Stirring gently cook for 2 minutes.
Add ¼ cup of Viennes Amber Lager, Bring to a simmer and reduce heat.
Let Reduce by Half, stirring occasionally.
Once Reduced add 1 Tbsp Stone Ground Mustard, Prepared Horseradish, and Honey.
Stir to incorporate, add remaining ¼ cup of Viennes Amber Lager.
Bring to a simmer and reduce by half, stirring occasionally.
Once Reduced, remove from heat, stir in Butter.
Taste for seasoning and add Kosher salt if needed.
Toss on wings and enjoy!
