MOJO CERVEZA Hot Sauce
INGREDIENTS
½ Cup ‘SIR-VEZA” Mexican LagerBy Bohemian Brewery, or your favorite Mexican Style pale Lager
½ Navel Orange, Zest and Juice
2 Tbsp Cilantro, Minced
1Tbsp Oil
1 Tbsp Shallot, Minced/Grated
1 Tbsp Oregano, Fresh Minced
1 tsp Jalapeno Hot Sauce, Yellow Bird (or your favorite hot sauce)
2 tsp Brown Sugar
2 tsp Garlic, Minced
1 tsp Cumin, Ground
½ tsp Red Pepper Flakes
½ tsp Salt, Kosher
¼ tsp Black Pepper
1 Tbsp Butter
NEXT LEVEL TIP:
You can replace the hot sauce with a fresh jalapeño, or whichever pepper is your favorite and depending on what the heat level you are looking for. A table spoon of freshly minced to a tsp of this hot sauce is a good replacement ratio.
Directions:
In a small saucepan, heat oil on medium high heat.
Add Shallots, Oregano, Cumin, 1 Tbsp Cilantro, Salt, and Pepper.
Stirring gently cook for 3 minutes.
Add Orange Zest, Jalapeno Hot Sauce, and Garlic.
Stirring gently cook for 2 minutes.
Add ¼ cup of Cerveza, Bring to a simmer and reduce heat.
Let Reduce by Half, stirring occasionally.
Once Reduced add Brown Sugar, and Juice from 1/2 Orange.
Stir to incorporate, add remaining ¼ cup of Cerveza
Bring to a simmer and reduce by half, stirring occasionally.
Once Reduced, remove from heat, stir in Butter.
Taste for seasoning and add Kosher salt if needed.
Toss on wings with remaining 1 Tbsp of Cilantro and enjoy!
NEXT LEVEL TIP:
Remember to reduce the beer slowly and at a good simmer, boiling and reducing it to fast will make the sauce very bitter.
