Orange Cardamon Tri-Tip
INGREDIENTS
2 1/2 LBS Beef Tri Tip
6 Cloves Garlic Gloves
1 Fresno Pepper - Stem removed and seeded
1/2 Sweet Onion
2 Oranges, Zest and juice
1/2 bunch Cilantro - Stems and leaves
1 tbsp Fresh Thyme
1/4 cup Beef Stock
2 Tbsp Butter
2 tsp Ground Cardamon
1 Tsp Paprika
1/2 tsp Ground Ginger
1 Tsp Kosher Salt
1/2 tsp course Black Pepper
DIRECTIONS
Orange Cardamon Rub:
Combine garlic, spices, salt, pepper, cilantro stems, thyme, onion and the juice and zest of 1 orange, in a food processor or mortar and pestle. Grind or blend into a paste.
Rub beef tri tip with 2/3 of the paste let, set for 30 min at room temperature or 2 hours in fridge. Reserve 1/3 of rub for basting liquid.
NEXT LEVEL TIP:
To develop a richer and sweeter flavor, go beyond roasting the pepper, garlic and onion. Before zesting the oranges, cut them in half and throw throw them on either griddle or your hot grill. Let them char lightly all around, this will caramelize some of the sugars in the orange adding a richer and more bold flavor to the dish!
Basting Liquid:
Rough chop the cilantro leaves, set 3/4 aside for garnish.
In blender, combine, butter, reserved rub, Cilantro, juice and zest of 1 orange, and beef stock.
Blend till Smooth.
Pour basting liquid into a small sauce pan, and bring to a simmer on medium high heat, stirring occasionally.
Let simmer about 10-15 min, or until it as reduced by about 1/2. Check for seasoning and salt if needed.
Keep warm through out entire cooking process of beef tri tip.
Orange Cardamon Grilled Tri Tip:
if beef tri tip was in the fridge bring out 30 minutes before beginning to cook, to let it come closer to room temperature.
Bring cast iron stove top griddle or grill to high heat on stove, and turn your oven on to 400 degrees Fahrenheit. If using a grill you want to temperature of the grill to start at at least 500 degrees Fahrenheit.
Lay tri tip on grill at a 45 degree angle, immediately baste with basting liquid. Let cook for 3 minutes, basting occasionally.
Flip beef tri tip over and again baste immediately. Let cook for 3 minutes, basting occasionally.
Flip beef tri tip over again while rotating it 45 degrees, giving the steak nice “hash marks”, baste immediately. Let cook for 3 minutes, basting occasionally.
Flip one last time, basting occasionally, let cook for 3 minutes.
Place steak on a baking sheet, and baste heavily one last time, before placing in oven let cook for 15-20 min for a medium cook. if using a grill, place to cold side of grill, and or continuously flip the beef tri tip to get an even cook.
Remove from oven or grill and let rest for a 10 min before slicing.
Serve with remainder of basting liquid as a sauce, and fresh cilantro as a garnish.
NEXT LEVEL TIP:
Short on time but want to take the flavor to the next level? Cut the Beef Tri Tip in half this will increase the surface area that the rub can get to and let the acidity of the orange break down the meat. This will make it juicier, more flavorful and cook faster! To keep it nice and tender do not forget to cut against the grain!
